Ingredients:
4 ounces Frieda’s Chinese Long Beans, cut in 3-inch lengths
2 cups washed, torn spinach leaves
1 cup Frieda’s Watercress, torn
1/3 cup salad oil
4 tablespoons white vinegar
1 teaspoon freshly ground black pepper
Peel of one lemon, cut into fine julienne strips (yellow part only)
Steps
Steam long beans for 4 minutes. Chill. For salad, toss together the beans, spinach, and watercress. In a shaker jar combine the salad oil, vinegar, and black pepper. Cover and shake till blended. Pour over salad and toss gently. Sprinkle the finely cut lemon peel on top.
